Asian lamb lettuce wraps are a fantastic lighter way to get your fill of those wonderful flavours that you might be familiar with from your weekend takeaway.
Heat a large frying pan or wok and add the oil. When warm, begin to cook the lamb mince with the mushrooms and diced carrot for a few minutes.
Next, add the chilli, garlic, and ginger and cook for a further 5 minutes. Stir in the soy sauce, honey, and Chinese 5 spice. Cook until the lamb mince is completely cooked through.
Before serving stir through the sliced spring onions. Separate the little gem lettuce leaves and place the cooked lamb mince inside. Garnish with peanuts and more sliced chilli if preferred.
