Potato Rosti With Scrambled Eggs & Lemon Pepper Smoked Salmon

Love a leisurely weekend breakfast, but looking for something savoury?  Try these scrambled eggs with smoked salmon served with a potato rosti.

  • 1 floury potato
  • 2 tbsp oil of your choice
  • 2 free range eggs
  • 60 g Lemon Pepper Smoked Salmon
  • Salt and pepper
  1. Grate the potato into a clean tea towel and wrap the towel around the potato and squeeze out the water.  Season the potato with salt and pepper.

  2. Heat some oil in the pan and place a metal chefs ring in the pan or go freestyle. Add in the potato and push down with the back of a spoon.  If you're using a ring remove it from the pan.

  3. Fry the rosti for 4-5 minutes on each side and add more oil if required. remove from the pan when cooked and transfer to some kitchen paper.

  4. Meanwhile, beat 2 eggs inside the OXO Good Grips Microwave Egg Cooker and microwave for 30-60 seconds.  Season to taste and place on top of the potato rosti before topping with the smoked salmon. Enjoy!
