  • 250 g rolled oats
  • 250 ml oat milk (or milk of your choice)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 12 strawberries
  • 6 apricots
  • 2 tbsp chopped basil
  • 1-3 tbsp maple syrup
  1. Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).

  2. Beat the oats, milk, eggs, vanilla extract, and baking powder together until smooth.

  3. When ready, pour the batter into the waffle maker and cook.

  4. In a heavy bottomed saucepan on a medium heat, warm the strawberries, apricots, basil and maple syrup until the fruit has softened. Approximately 5-8 minutes.

  5. To serve, top the oat waffles with the fruity basil sauce and a scoop of yoomoo's honey 'n' granola frozen yoghurt.
