A fresh citrus wholemeal waffle recipe, that's low in sugar and perfect for a lazy weekend breakfast! use a shallow waffle iron to make 6 from this batter

Ingredients
  • 2 cups wholemeal self-raising flour (240g)
  • 2 eggs
  • 2 cups almond milk (480 ml)
  • 2 tbsps maple syrup
  • 1/4 cup vegetable oil (60 ml)
  • 1/2 cup blueberries (50g)
  • zest of 1 lemon
Instructions
  1. Set up your waffle maker as per the manufacturer's instructions (I used the Belgian waffle setting).
  2. Stir all the dry ingredients together in a bowl and then beat in the maple syrup, almond milk, coconut oil and eggs until smooth.
  3. When ready, pour the batter into the the waffle maker and cook.
  4. Serve with your favourite toppings including more maple syrup and enjoy!
