No Mayo Apple Slaw

Ingredients
  • 250 g /2 cups grated or spiralised cucumber
  • 250 g /2 cups grated or spiralisedĀ carrot
  • 150 g /1 cup edamame beans
  • 50 g /1/2 cup mixed seeds
  • 2 granny smith apples finely sliced
  • 1 red onion finely sliced
  • 200 g /1 cup full-fat Greek yoghurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp lemon juice
  • 1.5 tbsp honey
  • 2 tbsp tahini
  • Salt and pepper to taste
Instructions
  1. In a bowl, mix together the lemon juice, Greek yoghurt, honey, tahini, salt and pepper until well combined. Set aside.
  2. Mix all the vegetables, apple and seeds together in separate bowl before pouring over the sauce.
  3. Toss the coleslaw so that everything becomes coated with the sauce.
  4. Serve and enjoy!
