Olives are definitely a flavour that I’ve grown into over the years and during adulthood is when I really fell in love with them It’s that inherent salty taste that I adore, which helps to balance sweeter flavours. In the Mediterranean, olives and tomatoes are regularly served together, whether that be in a sauce, with meat or fish, salads, pizzas, pasta dishes – it’s a classic pairing. I thought that it would be great to use both ingredients when experimenting with some more marinated olive recipes.
Fire up any of your upcoming parties with these juicy manzanilla olives stuffed with chorizo and marinated with sweet tomatoes, red onion and herbs.
- 150 g Fragata Stoneless Manzanilla Olives filled with chorizo
- 1/2 red onion sliced
- 12 cherry tomatoes halved
- lemon peel slivers from 1 lemon
- 1 tbsp fresh rosemary chopped
- 2 tbsp fresh thyme chopped
- 100 ml extra virgin olive oil
- 25 ml white wine vinegar
In a bowl, mix all the ingredients together and pour over the vinegar and oil.
Transfer to an airtight glass jar and store in the fridge until needed.
Eat and enjoy!
The sweet and salty flavour combination is right up my street which is achieved by using the naturally sweet tomatoes and obviously the olives. These manzanilla olives from are hiding a tasty secret, they’re filled with chorizo. So not only do you get that saltiness from the olives you also get that sweet smoky flavour too. They’re a really nice idea to use if you’re looking to add a different flavour combination easily to a dish or wanting to serve up something a bit different at any upcoming parties to impress your guests.
