An easy hummus dip that is great spread in your lunch time sandwiches instead of butter or can simply be served up as it is with your favourite crudités.
It’s been a while since I’ve made my own hummus and after forgetting to add it to my weekly online grocery shop the other week I thought it was about time I made my own. Thankfully, I had all the necessary ingredients in my kitchen cupboards to make a basic batch of hummus. Although I didn’t want this to be just any old hummus and fancied jazzing things up by adding some additional and more exciting ingredients.
- 400 g chickpeas
- 6 Peppadew Mild Piquante Peppers
- 100 g feta cheese
- 1 tbsp tahini
- 1 tbsp fresh lemon juice
- 2 cloves of garlic
- Chickpea water to loosen the hummus
Place all the ingredients in a food processor and blitz.
Pour in some chickpea water a bit at a time until the desired consistency is reached.
Serve and enjoy!
I’m a massive fan of feta cheese and like to blend it up with other ingredients to give a creamy saltiness to sauces like in my Courgetti with Avocado and Feta Sauce. Also, seeing the half empty jar of Mild Peppadew Piquante Peppers in the fridge encouraged me to add them into the mix too. I love snacking on these piquante peppers, they have a mild heat and a sweetness that I think is the perfect flavour match to the salty feta cheese.
Hummus is one of my favourite foods, packed full of protein from the chickpeas and the range of different flavours that you can create are endless. I like to spread this hummus on toasted sourdough or pumpernickel bread, pile a huge dollop on my salads or simply serve it as it is with my favourite crudités for a healthy snack.
