Is anyone else tired of the constant dull grey of winter?
Now that we’re nearing the end of February my head has leaped ahead to spring – sunshine, beautiful fresh flowers and Easter bunnies. What’s not to love about the season. It’s also my birthday season, so I may be a bit biased! I digress, I’m really looking forward to that wave of freshness and upbeat positivity spring brings with it, winter seems to be going on forever.
As we move towards spring, I’ve got a little something that you all need in your lives. Like sun rays beaming through a cloudy sky, this blushing pink drink will brighten up any day. Full of zingy zesty flavour, sweet pomegranate and spicy ginger heat, it’s just the non-alcoholic pick me up that we all need at this time of year.
- 1 pomegranate
- 1 lime , peeled
- 1/2 inch of ginger , peeled
- 2-3 tbsp maple syrup
- 1/2 litre of still or sparkling mineral water
Remove the seeds from the pomegranate and an them to a blender with the maple syrup, lime and ginger.
Blitz until smooth and pass through a sieve to remove any lumps.
Portion the fruit mixture into 4 small glasses and top up with still or sparking water and stir before serving.
Using maple syrup to add sweetness to the drink works well instead of processed sugar, you can really add as little or as much as your sweet tooth desires. Also, depending on whether you like some fizz to your drink, you can use either still or sparkling bottled water. I have to say, the sparkling mineral water does make it feel a bit special!
When the season arrives, you could easily change up the pomegranate for some mixed berries and you could easily swap out the sparkling water for some bubbles of the alcoholic variety…hic!
