Hey, you lovely lot! I hope you’re all having a beautiful Sunday. I made sure that I had a super productive day yesterday with work and sorting the house out so that I can put my feet up today. After battling with a cold this week I’ve been desperate for a day to do nothing and that day has arrived. The weather forecast isn’t looking too great at the moment so I think I’ve picked the perfect day to hibernate. There has been a definite chill in the air this week, despite the sunshine and I’ve face-planted myself into copious bowls of porridge topped with lots of berries and cinnamon.
Since there has been a chill in the air, I’ve gone into cold weather mode with my lunch options and had this very tasty butternut squash soup when I took Aiden to the Ashmolean Museum the other day. It’s probably one of my favourite soups EVER…so rich and hearty!
I’ve been on another Buddha Bowl kick this week and fixed myself this beauty for lunch. It’s a mish-mash of brown rice, kidney beans, smoked mackerel, steamed broccoli and a fried egg on top.
I think I was trying to recapture summer with this smoothie but it was so creamy that it was more like a milkshake. Into the blender went mango, banana, unsweetened almond milk and vanilla protein powder, so scrummy!
Hands down this was my most favourite meal of the week, I just love Moroccan food and all those warming spices. I made my Moroccan Lamb Tagine with cous cous, rocket, cucumber, feta and pomegranate seeds.
I treated myself to some lunch whilst out running errands at Alpha Bar in the Covered Market. This was such a bargain and I was really impressed with it. I chose the pearl barley and roasted vegetable salad, leafy green salad, hummus and my current obsession, grilled halloumi cheese.
This is proof that eating healthy doesn’t have to be time-consuming. I made this for dinner last night and it was ready in a flash and was really simple to make. I stir fried some chicken thighs, a tender stem stir fry vegetable pack with some ginger, garlic, chilli, soy sauce, cashew nuts and chilli noodles.
That time of year has arrived (and it feels earlier than normal!) when the utterly delicious pumpkin spiced lattes hit the shops. When I saw it advertised in the window I knew that I had to have my first one of the season, however, I didn’t realise that when I agreed to the whip that it would be that high. The carrot cake was amazing and the perfect partner to my latte. I’m looking forward to lots more PSL’s and pumpkin, in general, all through autumn.
