Hello friends, hope you are all enjoying your weekends! I feel like I haven’t really stopped since yesterday as I hit up the 1st of March with a spot of spring cleaning. As soon as I woke up I was in the mood to just get stuff done and this feeling continued after my spinning class too, before I knew I was in full spring cleaning mode. There’s my little car getting it’s own spring clean, she looks so sparkly and pretty now, love my car! Whilst I’m not working I’m dying to have a declutter and sort out some of the cupboards around the house, some of them are seriously disorganised. Plus, I think a good deep clean and sorting out is healthy for the mind, so I’m quite looking forward to it.
I’ve had some wonderful food this week:
I’ve been loving my Salted Peanut Butter Granola this week. It’s been so hard to not eat it all but I’m actually quite proud of my restraint. Check out the recipe if you haven’t already. It was great for breakfast with fresh cherries, strawberries and organic pouring yoghurt.
Yesterday I made this super quick soup for lunch – butternut squash soup has to be the most simplest soups to make ever. I had roasted some squash that morning with the skin on and before lunch scooped out the insides and added it to the blender with some stock, cracked pepper corns and sea salt. In minutes I had a wonderful creamy soup that I just warmed up on the hob, yay!
Porridge has been my best friend this week as I’m still not feeling the green smoothies at the moment. I made these chocolate oats with unsweetened cocoa powder, dates and cherries.
I’ve also been loving veggie packed stir fries with noodles too. They are a great way to get more vegetables in your diet and very easy to make for a speedy week day meal. This included a mix of peppers, edamame beans, mushrooms, spring greens and diced pork. We had this before going to see The Book Thief at the cinema on Thursday night, awesome film.
Last night I joined Alfie’s tee-total brigade with this lovely alcohol free pear cider that I picked up in Sainsbury’s. I love the alcoholic version of this drink, but I can also see the appeal of the non-alcoholic version, it tasted just like pear drops.
It really has been another great week, which included a lovely shopping trip with my nan and mum of Friday and I’ve really enjoyed spending more quality time with Alfie. I have a much more relaxed day planned today as I’m still suffering from the tiredness that I mentioned in Wednesday’s post, so I have been laying off the workouts this week as I realised that resting is more of a priority. If the weather is nice I may pop out for a walk and enjoy the first signs of spring and I have some relaxing yoga planned for later.
